The culinary world is about to witness a fusion of Mediterranean flavors with a distinctive Filipino twist, thanks to Chef Kalel Chan, the esteemed Doña Elena chef ambassador.
This unique collaboration introduces a limited-edition menu that celebrates the versatility of olive oil, running from salad dressings to sautéing and even desserts.
For the delightful appetizer trio on this special menu, available as a set or individually until November 10, 2023, Chef Kalel has crafted a selection of dishes that promise to tantalize the taste buds.
First on the list is the Grilled Barbeque Gremolata Pork Iberico. Drawing inspiration from the beloved Filipino street-side grill, this dish features succulent Secreto Iberico marinated to perfection and adorned with a gremolata sauce enhanced by the distinctive flavors of Doña Elena anchovies.
The second dish is the Hamachi Crudo Pani Puri with Sinigang Aguachile. It presents fresh hamachi fish, lightly drizzled with Doña Elena Extra Virgin Olive Oil, served atop a fried, hollowed semolina dough filled with minced green olives and capers. This unique creation is then complemented by a light aguachile sauce, a zesty twist on the classic sinigang soup base.
Completing the appetizer lineup is the Adobong Pusit Arancini with Grilled Pulpo and Bonito Aioli. This dish draws inspiration from the Italian appetizer rice balls. Filled with adobong pusit and fried to perfection in Doña Elena Pomace Olive Oil, it offers a delectable combination of crispy exterior and golden brown color.
For the main course, Chef Kalel serves a generous portion of Grilled Lamb Ribs resting on a bed of homemade harissa sauce. Served alongside is a cold orzo salad enriched with Doña Elena Black Olives. The harissa sauce, a Mediterranean condiment, is made from scratch and notably features Doña Elena Pure Olive Oil, combined with fiery spices such as chilies, cumin, and coriander, complemented by a lightly sweet red capsicum. The cold orzo salad, drizzled with Extra Virgin Olive Oil (EVOO), is finished with a citrusy gremolata, crafted from finely chopped parsley, garlic, and lemon, offering a refreshing contrast to the smoky and tender lamb.

As a sweet conclusion to this Mediterranean-Filipino culinary journey, Chef Kalel presents a Labneh Ice Cream that is equal parts rich and refreshing. This indulgent Mediterranean creation carries flavor notes reminiscent of a blend between cream cheese and yogurt, with an exquisite balance of tanginess and saltiness. To add a delightful crunch, it’s garnished with sesame-pistachio brittle and drizzled with a fruity and fragrant rosemary oil, where Doña Elena Olive Oil plays a pivotal role.
