Siargao’s culinary gem, Roots, takes its mission beyond the plate as it becomes the latest restaurant to join Globe Platinum’s Gastronome Giving Series, a fundraising initiative in collaboration with Fine Dining Club Philippines in support of the Hapag Movement—Globe’s flagship hunger alleviation and livelihood program under the Globe of Good sustainability platform.
Running until August 31, 2025, Gastronome Giving transforms exclusive tasting menus into meaningful experiences, where a portion of every booking directly supports feeding and livelihood efforts for marginalized communities.

Set in a bahay kubo-inspired space within Kaimana Resort, Roots is far from your typical island restaurant. Its name speaks to a deeper philosophy, one rooted in honoring the diverse that blends the diverse heritage and travels of its founders with their curiosity for Filipino ingredients.lWith an interdisciplinary approach, the team behind Roots, chefs Filippo Turrini and Inês Castañeda, gastronomic designer Marina Castañeda, designer and anthropologist Daan Overgaag, and communications expert Ricardo Miranda de Sousa, built the restaurant around a deeply local and seasonal approach. Every dish is crafted with fresh, seasonal ingredients sourced directly from farmers and fisherfolk helping not just to celebrate Philippine produce, but also to create steady, meaningful income for communities across Siargao and the Philippines.
Their ever-evolving tasting menu is crafted not just with creativity, but with what local farmers and fisherfolk have available—often changing daily. This requires more than just culinary skill; it’s the product of constant research, an ongoing effort ofbuilding a trusted supply network of collaborators who could meet the quality and volume demands needed.

Its tasting menu is an exploration of bold and imaginative flavor combinations: Fried Roots (Cassava, Onion, Ashes), Our Ceviche (Rainbow Runner, Coconut Tiger Milk, Singkamas), Lazy Raviolone (Eggplant Ragu, Filipino Wagyu), and Bitter Plastik (Cacao, Bitter Melon, Asin Tibuok), to name a few, each one telling a story of local ingredients treated with global finesse.
Roots also quietly works to uplift the next generation of Siargao-based talent, upskilling local youth and training them in hospitality and restaurant operations, creating real opportunities for career growth on the island.
This thoughtful, people-first approach is in some ways inspired bythe values of Slow Food, a global movement that values tradition, sustainability, and fairness in food. What began in Italy in the late 1980s as a response to fast food has grown into a call to protect local food cultures and support responsible farming. Its principles—serving good food, using clean methods, and ensuring fair treatment for producers—are deeply aligned with what Roots stands for.
