Filipino desserts took center stage as renowned chefs Jac Laudico and Abi Balingit reimagined classic Pinoy sweets with a modern and international twist in the second installment of ‘Taste of the Philippines: A Global Culinary Journey’.
Held at Guevarra’s by Chef Laudico, the event showcased a unique collaboration between Chef Jac Laudico, a well-respected figure in the Philippine culinary scene, and Chef Abi Balingit, a New York-based baker and recipient of the 2024 James Beard Emerging Voice Award.
Their partnership introduced a refined take on traditional Filipino desserts, blending heritage flavors with contemporary techniques.
As part of their culinary reinvention, the duo presented elevated versions of well-loved Filipino sweets, including: Maja Blanca Cheesecake, Halo-Halo Baked Alaska, Adobo Chocolate Chip Cookies, Ube Cheese Crinkles and Thai Tea Kutsinta.
These desserts, which feature an exciting fusion of Filipino flavors with international influences, will be available exclusively at Guevarra’s buffet throughout March 2025.
“Our unique history, shaped by over 300 years of Spanish influence, has given rise to a cuisine unlike any other in the region,” said Chef Jac Laudico.
“Our breads, pastries, and desserts are a delightful fusion of European tradition adapted to Filipino tastes. With Latin-influenced sweets and Southeast Asian-inspired delicacies rich with coconut, rice, corn, and local fruits, Filipino desserts are ready to be embraced by the international market.”
For Chef Abi, author of Mayumu: Filipino American Desserts Remixed, the event was an opportunity to bridge Filipino-American flavors with traditional Filipino cuisine.
“This collaboration will highlight Abi’s unique approach to Filipino-American desserts,” shared Chef Laudico.
“The dishes showcased, which are featured in Abi’s James Beard-awarded book, reflect a fresh and exciting take on Filipino flavors. We’re thrilled to have these desserts as part of our offering.”
Beyond the desserts, the event also honored the late Chef Margarita ‘Gaita’ Fores, a pioneering force in Filipino cuisine.
“I love her passion, I love her way of telling stories. We’re both Ilonggos, and I can relate to the type of food that she serves, especially when she’s paying homage to the flavors of our region,” said Chef Jac.
“Even as a Filipino-American, I see so much that she has contributed to Filipino food, so I’m very grateful for that,” added Chef Abi.
The event is part of an ongoing initiative to promote Filipino culinary heritage on a global scale. Chef Jac also revealed that more international collaborations are in the works, including projects with chefs from Italy and Melbourne slated for later this year.
“We’re committed to promoting Filipino cuisine and inviting chefs from around the world to share their stories and culinary techniques,” said Chef Laudico.
“This is just the beginning of a culinary adventure that will elevate Filipino food to the global stage.”
