Filipino chef and culinary entrepreneur Chef Morris Danzen continues to champion Filipino cuisine on the international stage, building meaningful connections between Australia and the Philippines through food, cultural exchange, and collaboration.
As the founder of CMD Supper Club, Chef Morris has become known for creating dining experiences that celebrate Filipino ingredients while bringing together chefs, artisans, producers, and communities across borders. His work reflects a simple philosophy: that food has the power to tell stories, preserve heritage, and connect people wherever they are in the world.
“Every collaboration is an opportunity to share a piece of the Philippines,” says Chef Morris. “Whether it’s a local ingredient, a shared meal, or a cultural exchange, I hope people leave with a deeper appreciation of who we are and what Filipino cuisine has to offer.”
Returning Home for a Series of Culinary Collaborations
This August, Chef Morris returns to the Philippines for a series of collaborations that celebrate creativity, craftsmanship, and regional flavours.
His tour includes Sud South, a collaborative dining experience with Chef Cabel, exploring the culinary connection between Southern Mindanao and Southern Sicily under the theme “Different Cultures. Same Seas. Shared Stories.”
He will also participate in the Siargao Food & Wine Festival, joining fellow chefs and industry partners in showcasing the richness of Philippine gastronomy while connecting local producers with a wider audience. The festival brings together celebrated chefs, producers, tourism stakeholders, and food enthusiasts to position Siargao as one of the Philippines’ emerging culinary destinations. Through interactive demonstrations and collaborative dining experiences, Chef Morris will showcase how premium Filipino ingredients, particularly calamansi, can be transformed into world-class products worthy of international recognition.
Completing the tour is a hands-on collaboration with Artisano Studio, where Chef Morris will share his passion for handmade pasta through an immersive culinary experience that blends Italian tradition with contemporary Filipino flavours.
Throughout these events, guests will also have the opportunity to experience the CMD x Stache House Calamansi Liqueur, highlighting how one of the Philippines’ most iconic citrus fruits can be transformed into a premium, internationally recognized spirit.
Recognition That Celebrates Filipino Excellence
Chef Morris’ growing international reputation is built on years of dedication to culinary excellence and promoting Filipino flavours abroad.
In 2020, he won the Gino Cerca Chef Championship in Italy, emerging as the national champion after competing against hundreds of professional and amateur chefs from across the country.
Most recently, his CMD x Stache House Calamansi Liqueur, created in collaboration with Australia’s Stache House Beverage Co., received a Silver Medal at the 2026 Melbourne Royal Australian International Spirits Awards, recognizing the quality and global potential of products made with authentic Philippine ingredients.
Beyond competitions, Chef Morris has remained an active supporter of Philippine food and trade initiatives through his collaborations with the Center for International Trade Expositions and Missions (CITEM), including his participation in IFEX Philippines as an IFEX Kitchen Culinary Champion, where he continues to elevate Filipino producers and culinary innovation on the international stage.
As Chef Morris returns home, his journey reflects more than personal success—it is a continued commitment to elevating Filipino cuisine, creating opportunities for collaboration, and inspiring a new generation of chefs to proudly share Philippine flavours with the world.
