Sentro 1771 showcases Filipino culinary legacy at Capitol Commons

Sentro 1771, restaurant known for its modern Filipino cuisine, hosted ‘A Taste of Culinary Legacy’ on November 4, at its Capitol Commons branch. The event, attended by select media including LionhearTV, celebrated the restaurant’s 26-year journey in revolutionizing Filipino dining.

Chef Vicky Rose Pacheco, co-founder and head chef of Sentro 1771, guided guests through the stories behind the restaurant’s most iconic dishes. Among the highlights was the Corned Beef Sinigang, a signature dish born from a kitchen experiment blending Irish-inspired corned beef broth with tamarind to balance its saltiness. This innovative twist became one of Sentro’s most celebrated dishes.

Another standout was the Rated GG, which elevated the humble galunggong into a gourmet masterpiece. Chef Vicky filleted the fish, cooked it in garlic-infused olive oil, and topped it with crispy garlic bits, redefining the dish once seen as a “poor man’s fish.”

The Fried Kesong Puti, a lightly breaded and fried carabao milk cheese served with a sweet-spicy dip, added a creative touch to the lineup.

“Dining at Sentro is more than just about ambiance or presentation—it’s about taste,” said Chef Vicky. “We want to bring Filipino cuisine to new heights while keeping its roots intact.”

The event also showed some of their menu items, some of Sentro’s must try offerings fresh aside from the popular ones.

In a regular dining setup, guests were treated to personalized dining experiences, with dishes like sinigang served in sample portions to adjust sourness to individual preferences.

Since its inception in 2002, Sentro 1771 has grown into a hub for modern Filipino cuisine. Its Capitol Commons branch recently expanded to accommodate private gatherings, featuring two function rooms for 12 guests each and a total capacity of 140. Other branches in Greenbelt 5 and Bonifacio Global City also offer private dining options.
