Esteemed restaurateur and cookbook author Sandy Daza makes his way to Iloilo, home to heirloom recipes and enduring culinary traditions from its seven districts, in the newest episode of “FoodPrints,” premiering on Metro Channel this Saturday (February 14) at 8:30pm.
“These culinary traditions are not just about food on the table. They are living links to the past to many generations,” said Chef Sandy in the episode teaser.
His first stop in the ‘City of Love’ is the district of Arevalo, known for its seafood dishes made from recipes passed down through generations. He also drops by a local favorite called Tatoy’s, which is renowned for its chicken and lechon baboy offerings.
Chef Sandy likewise visits Mandurriao, known for its delicious pata or slow-braised pork leg. He also takes a closer look at how kansi, a cross between bulalo and sinigang, is made in Tatay Andres’ Patahan.
“FoodPrints” spotlights another Iloilo district, Molo, and its historic spots and culinary favorites, which include pancit molo. Chef Sandy swings by the Panaderia de Molo, known as the oldest bakery in the Philippines.
Other stops in this episode are the districts of Lapuz, Jaro, and La Paz. Lapuz is known for its native delicacies, while La Paz is famous for its savory batchoy. Among Chef Sandy’s destinations in Jaro is the Biscocho Haus, popular for its buttery biscocho and other Ilonggo goodies.
The trip would not be complete without a visit to Downtown Iloilo or the City Proper, where the “FoodPrints” host tries the queen siopao at Roberto’s, the pansit sun yat sen at Dainty House, and the dimsum specialties at Master Chua Foodhaus.
