City of Dreams Manila highlights tempting New-Style Japanese, Filipino, and Southeast Asian seasonal menus to indulge in beginning this July.

Nobu Manila

The restaurant’s seasonal menu lets diners delve deeper into the signature Nobu-style experience popularized by celebrity chef Nobu Matsuhisa that is well loved by A-list international celebrities, with an expertly curated eight-course Japanese-Peruvian menu. Preceded by the customary zensai (chef’s choice of appetizer), the first course of Crispy Salmon with teriyaki aioli is followed by an assortment of sushi. The tasting menu continues with Ama Abi (sweet shrimp) and Engawa (fluke fin)  with cucumber, red onions, tomato salsa, spicy yuzu dressing and soy salt; Hokkigai (surf clam) Salad Roll with carrot Karashi Su Miso (KSM – tart miso mustard sauce) dressing, honey lemon and fried shitake mushroom; Pan-seared Seabass with edamame miso puree and confit vegetables; Australian Lamb Chop with rosemary miso, roasted seasonal vegetables and potato korokke (croquette); and Asari Clam Soup with wakame (seaweed), carrots, enoki mushroom, sansho pepper and layu oil (Japanese chili oil). Sesame Panna Cotta with maple toffee crisps, mango passion fruit sorbet, and green tea crumble provides a sweet conclusion to the meal.

Nobu Manila’s seasonal tasting menu (P6, 210 net per person) is available until September. Nobu is open from 5 p.m. to 10 p.m., Sundays to Thursdays, and until 11 p.m. every Fridays and Saturdays.

Haliya

This season, Haliya puts a spotlight on three Filipino dishes featuring live alimango (mud crabs) cooked to order, and creatively reinterpreted and refined with subtle innovations. Set to impress diners are dishes for family-style sharing: Relleno Alimango, crabs stuffed with panko crumbs served with binalot na crab cake, garlic aioli, pork floss and homemade chili sauce; Pansit Alimango, salt and pepper crab with glass noodles, shitake mushrooms, carrots, white cabbage, kinchay, bok choy, and fried shallots; and Alimango sa Gata, crispy fried crab with green soybeans, curly red capsicums, micro greens, kalabasa (squash) sticks, and aligue sa gata (crab fat in coconut sauce).

Haliya’s seasonal Alimango Festival menu is available until the end of the month. The restaurant is open for dinner from 5 p.m. to 11 p.m., Mondays to Fridays and for lunch and dinner from 11 a.m. until 11 p.m. every Saturdays & Sundays.
